Elderberry jam
The beauty of this recipe is that you don’t need to follow exact measurements. All ingredients are approximate so please feel free to experiment according to your taste.
Ingredients:
1kg of elderberries.
2 cinnamon sticks.
1 cardamom clove.
1 anise star.
lemon zest
5-6 cloves.
250ml filtered water.
pinch of sea salt
4-5 tablespoons raw honey or maple syrup for the vegan version.
Preparation:
Carefully pick ripe elderberries from the stem. We recommend wearing gloves as berries leave stains.
Wash berries well under running water, discard all unripe and defect berries.
Transfer to a cooking pot, add filtered water, salt, lemon zest,spices and bring to boil.
lower the heat and simmer on medium heat for about 40mins or until water is nearly evaporated.
Using potato masher, mash the mixture to get a coarse jam texture.
Once the mixture cools down to room temperature, add raw honey and give it a good stir.
Transfer to jars and store in a cold dark place.
